Chiles Rellenos Recipe

- Make sure the eggs are room temperature before making the batter, that will help with batter consistency, a quick way to bring the eggs to room temperature is to place the eggs in bowl with warm water for 5 minutes.
- Also make sure that you are using the proper whisk attachment for beating the eggs.
- You can also add only one egg yolk that will be enough for the egg batter, I personally don't like waist ingredients so most of the time I use all the egg yolks.
- The batter can be done without the egg yolk but for the best result I recommend using both parts of the eggs.
- You can also change the poblano pepper stuffing for any cheese you desire my suggestions are (panela cheese, Cotija cheese, Mozzarella Cheese and Mexican blend cheese)
Ingredients
4 chiles Poblano
3 eggs
1/3 cup all purpose Flour
1 1/2 cup Mexican blend cheese
3 roma tomatos
2 guajillo chiles
1 jalapeño chile
2 garlic cloves
1/2 white onion
1/2 tsp oregano
1/2 cup water
1 tbsp olive oil
1/2 tsp sal
1/2 tsp black pepper
Instructions
- In a cast iron pan roast the poblano pepper for about 5-8 minutes on each side, then cover the pan with a lid and let it cook for about 5 minutes, that will help to soften the poblano skin.
- Remove the poblanos from the pan add them to a bowl or ziplock bag make sure that it is sealed or covered.
- Let the poblano pepper rest for 5 minutes.
- After you let the poblano rest, gently remove the skin, and with the kitchen scissors open a small cut in the poblano big enough to stuff them, remove the seeds and wash them if necessary.
- Stuff the poblanos with cheese
- Carefully Seal the poblanos with a tooth pick
- Cover the poblano peppers with all purpose flour and place them aside.
- For the red chili sauce in a cast iron pan add the tomatoes, jalapeños, chile de árbol, garlic and onion, roast the vegetables for 5-8 minutes on each side.
- Transfer the vegetables to a food processor, add oregano, oil olive, water, salt and pepper
- Blend the ingredients until you make a smooth sauce
- Pour the sauce in the same pan that you roast them, cook the sauce on low to medium heat until it becomes a semi-thick consistency, reduce the heat to low.
- Mean while the sauce is cooking separate the egg whites from the yolk
- Then add the egg whites to a bowl and with a hand whisk or stand mixer until the eggs get a whipping cream consistency
- Then add the egg yolks and keep beating until the ingredients are well combined, this will take about 5-10 minutes. Then set aside the egg mixture
- In a separate frying pan add 2 cup of oil preheat the pan at medium heat.
- Then dip the poblanos in the egg mixture, carefully place the poblanos in the hot oil, fried until golden in each side
- Repeat the same process with all the poblano peppers, place the poblanos pepper on a plate with a paper towel to remove excess of oil
- Lastly remove the tooth picks from the poblano peppers then add the poblano pepper to the red sauce, cook for 2 more minutes.
