Shrimp shelves 

2 bay leaf 

4 black pepper corn 

Salt 

6 cup of water 


For garnish

Ingredients:

  • 1 lb of shrimp (cleaned and deveined)
  • 1 cup Arborio rice
  • 3 garlic cloves, minced
  • 1/2 small white onion, finely chopped
  • 1 shallot, finely chopped
  • 1/2 cup white wine
  • 5 cups shrimp broth (recipe below)
  • 1 stick of unsalted butter
  • 1/2 cup peas
  • Salt and pepper to taste

For Shrimp Broth:

  • 3 tbsp olive oil
  • Shrimp shells
  • 2 bay leaves
  • 4 black peppercorns
  • Salt
  • 6 cups water

For Garnish:

  • Parmesan cheese
  • Chopped chives
  • Lemon wedges

Instructions:

  1. Prepare the shrimp broth: In a large pot, heat the olive oil over medium heat. Add the shrimp shells and sauté until they turn pink and release their flavors. Add the bay leaves, black peppercorns, and salt. Pour in the water and bring to a boil. Reduce heat and let it simmer for about 20-30 minutes. Strain the broth and set it aside.
  2. In a separate large pot or deep skillet, add some olive oil and butter butter over medium heat. Add the shrimp seasoned with salt and pepper cook the shrimp until they turn pink and are cooked through. Set aside. 
  3. On the same skillet add the minced garlic, chopped onion, and shallot. Sauté until they become translucent and fragrant.
  4. Add the Arborio rice to the pot and stir it in with the onion mixture, ensuring each grain is coated with butter. Cook for about 2 minutes, stirring constantly.
  5. Pour in the white wine and stir until the liquid is absorbed by the rice.
  6. Begin adding the shrimp broth, one cup at a time, stirring continuously and allowing the rice to absorb the liquid before adding more. Repeat this process until all the broth has been added. This will take approximately 20-30 minutes
  7. When the rice is almost tender but still has a slight bite (al dente), add the cooked shrimp and peas to the risotto. Stir gently to combine.
  8. Continue cooking for a few more minutes until the rice is fully cooked and has a creamy consistency. If needed, you can add a little more broth or hot water to achieve the desired consistency.
  9. Lastly add more butter combine stir gently to combine 
  10. Remove the pot from the heat. Season the risotto with salt and pepper according to your taste.
  11. Serve the shrimp risotto hot, garnished with freshly grated Parmesan cheese, chopped chives, and a squeeze of lemon juice.
